I had stayed with my Cuban friend for a couple of months one of the mornings I woke up smell this fantastic amazing aroma I followed my nose to this crock pot sitting in the kitchen opened the lid saw plump swelled up raisins capers and oh my goodness did I fall in love, this is not his family's recipe by the way just in case they see this and want to use me in the crockpot next time for giving family secrets away so I followed through with a 1905 recipe from a Cuban restaurant in Tampa Florida as time went on and I made this dish over a dozen times kind of put my own flair on it by simply not measuring the ingredients, kind of have to use your senses on that one which makes it really good so if the first one isn't great try it again remember what you did and change what you think needs changed. Good luck and I hope you enjoy.

Ingredients

35 mins
6 servings
  • 3 1/2 lbchicken breasts
  • 1lemon
  • 6garlic cloves
  • 2Par boiled potatoes peeled & chunked
  • 2onions chopped
  • 8 ozcan of tomato sauce
  • 1/4 tspGround cumin
  • 2Bay leaves
  • 1/4 cupolive oil
  • 1/2 cuppitted green olives
  • 1/2 cupRaisins
  • 1/4 cupcapers
  • 1/2 cupSherry
  • 1salt pepper to taste

Steps

    Marinated chicken in lemon juice salt and pepper for 2 hours

  2. 2

    Heat olive oil in skillet or heavy bottomed saucepan brown the chicken just a minute or two each side then remove from pan and ad onions, garlic, bayleaves, cumin and tomato sauce.

  3. 3

    When onions are almost tender add par boiled potatoes, raisins, olives and capers and browned half cooked chicken breast chunked ( or whole bone in chicken cut into 6 pieces make sure chicken is done to the bone)

  4. 4

    Cook over low heat until chicken is tender stir in sherry ( if using bone-in chicken make sure it's cooked to the bone)

  5. 5

    White rice is usually served as a side dish
