200 gramsFrozen peas defrosted
6 sliceProsciutto ham
180 gramsBocconcini
Vinaigrette
1Juice of one orange
2 tbspOlive oil
1 smallHandful of mint finely chopped

Juice one orange then reduce it on the stove to intensify the flavors add chopped mint and then pour into a shaker add the oil and shake vigorously to emulsify.

Mix the bocconcini, peas and prosciutto and pour over the vinaigrette and throw some small mint leaves to finish
