Wash and dry the sardines. Coat each sardine in a mixture of breadcrumbs, grated Parmesan, parsley, salt, and pepper.

Line a baking sheet with parchment paper and lightly brush it with olive oil. Arrange the sardines side by side on the sheet.

Drizzle a little olive oil over the top and bake in a preheated oven at 400°F (200°C) for 20 minutes, until golden and crispy. Serve with a fresh salad and lemon slices.
