Ingredients

  1. 1 packagesactive dry yeast (1/4 oz)
  2. 1/3 cupwarm water (110° - 115°)
  3. 1/4 cupchopped fresh dill
  4. 1 cupcottage cheese - room temperature.
  5. 2 tbspsugar
  6. 1/4 cupfinely sliced scallion (about two average sized bunching scallions)
  7. 1 tbspmelted butter
  8. 1 tspsalt
  9. 1/4 tspbaking soda
  10. 1egg
  11. 2 cupto 2 1/2 cups flour
  12. 1additional melted butter for brushing the finished bread

    Time to prepare estimation is for prep and mixing only. You'll need an hour & 40 minutes for rising, as well as, upto 45 for baking.

    Dissolve yeast in water, set aside.

  3. 3

    In a mixing bowl combine together cottage cheese, sugar, scallion, dill, butter, egg, salt, & baking soda. When combined, fold in yeast mixture.

    Gradually add in flour until it forms a stiff dough.

    Cover & let rise in a warm place for an hour.

  6. 6

    Turn the risen dough into a well oiled round casserole dish - between 1 & 1 1/2 quart. Continue to let rise for 30-40 minutes more.

    Bake at 350° for 35-45 minutes.

    Brush with more melted butter (about 1 tblsp) upon removal from the oven.

    Allow to cool & cut wedges to serve.
