Baked Balsamic Chicken

We have just begun what I would like to call the BUSIEST week in our household. I don't think we are this busy even over at Christmas time. Last night I was talking out loud that it would be super awesome if we had a live in nanny just so we don't have to take the 2 year old every where ... its not always the best when you don't have family in the same country!
Miss 2 year doesn't know this yet but shes going to have late nights every single day of this week and she probably would love it because she can PLAY! Hopefully this won't ruin her night routine ... We will only know on Saturday LOL
So why are we busy? We attend a very international church here in Wellington, NZ and once a year, we have something called International night. Its an amazing cultural show that ends with food to sample - the whole thing is FREE and we get lots of people attend it every year. This year as always K has got a special bollywood performance and I am involved in the show too! So its going to be busy busy busy this week so I have had to put a lot of thought into meal planning, as it has to be quick and easy cause I don't want to be doing take out every single night and blow out the budget and the waistline
I made this dish for Sunday lunch which was an EXTREMELY busy day with not just church but practise for the show... Miss 2year old also decided it was the day to NOT nap, so it was pretty full on by the end of the day and we were quite happy to see her sleeping! I like this dish c...

Place the well washed chicken pieces in the baking tray. I removed the skin,

You can opt to keep it or not :). Its up to you

Pour the rest of the ingredients excld the coriander into a bowl, and give it all a good mix

And pour it over the chicken pieces and place it in the oven

Let it cook for 30mins and then flip the pieces over and pour the marinade thats already in the dish

Over the pieces. Allow it to cook for another 10 mins or so or until the chicken is well cooked

Once it was ready to serve, I garnished it with freshly chopped cilantro

For the peas: to some olive oil, I added cumin seeds and the frozen peas.I then seasoned it with some garlic salt and pepper and once it was all cooked through I removed it from the heat

Put it all together and you have one amazing meal
