  • 1/4 cupExtra Virgin Olive Oil
  • 2 mediumOnions, finely chopped
  • 4 stalkCelery, finely chopped
  • 2 mediumCarrots, scrubbed and grated
  • 5 cloveGarlic, thinly sliced
  • 1 lbGround Beef
  • 1 lbGround Pork
  • 1/4 lbBacon, finely chopped
  • 1 canTomato Paste
  • 1 cupMilk
  • 1 cupDry White Wine
  • 1 tspFresh Thyme, picked
  • 1Salt and Pepper

Steps

  1. 1

    Heat olive oil in a large, heavy saucepan over medium heat.

  2. 2

    Add onion, celery, carrot, and garlic. Cook until translucent.

  3. 3

    Add ground beef, ground pork, and bacon. Cook, while stirring, until meat is browned.

  4. 4

    Add tomato paste, milk, wine, and thyme. Bring just to a simmer. Hold for 60-90 minutes.

  5. 5

    Season with salt and pepper.
