Baked BBQ chicken with Peppers & Onions

I was looking for something quick, simple & easy to make with what I had in the house for some picky eaters. I prefer to bake chicken to make it healthier. I served this with a side of mac n cheese and corn muffins, but the sides are endless. Great alternative if you don't have a grill or its still too chilly to cook outside. Marinating the chicken helps make it moist and full of flavor, so even if you want to start the night before and let it set, you can absolutely do that too! You can use whatever color pepper you like, and make it your own. Hope you enjoy this as much as I did!

Ingredients

40 mins
8 servings
  • 1 mediumonion, chopped
  • 1 largeGreen Pepper, sliced in small strips
  • 1Bottle of BBQ sauce, I used 1 bottle of sweet baby rays BBQ sauce
  • 10 piecethin cut chicken breasts
  • 2 tbspLight brown sugar

    Pre-heat oven to 475°

  2. 2

    Slice onion and pepper. Add to large bowl and combine with light brown sugar and 1/2 BBQ sauce

  3. 3

    Rinse chicken, pat dry & add to bowl with peppers, onion, & BBQ sauce

  4. 4

    Mix chicken and add half of what's left of bottle of BBQ sauce, leaving some BBQ sauce left over.

  5. 5

    Cover with foil after mixing well & refrigerate atleast 30 minutes

  6. 6

    When ready, add to pan. You can keep peppers &Onions separate to one side of pan if you choose or on top of chicken & add remaining BBQ sauce on top

  7. 7

    Bake for 25 minutes. Then let sit for about 3 minutes before serving. And Enjoy!
