Ingredients

  1. 1 tbspunsalted butter
  2. 1 tbspolive oil
  3. 2 largered onions, sliced thin
  4. 1 tspsugar
  5. 1salt to taste
  6. 1pepper to taste
  7. 1bottle (12 ounces) amber ale
  8. 2fennel bulbs, trimmed and sliced thin

Steps

  1. 1

    In a large skillet over medium heat, heat the oil and butter.

  2. 2

    Add onion and fennel and cook until soft and golden brown.

  3. 3

    Stir often, for about 15 minutes.

  4. 4

    Sprinkle with sugar and continue to cook for another 5 to 7 minutes.

  5. 5

    Pour in the ale and simmer over medium heat until most of the liquid is evaporated and the vegetables are soft, about 5 minutes.

  6. 6

    Add salt and pepper to taste.

  7. 7

    *This recipe makes about 2 1/2 cups.*

    **This tastes really good inside a cheese quesadilla with sour cream and tomatillo salsa.**

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
