Ingredients

  1. 3 cupRolled Oats-cannot use instant
  2. 1/2 cupbrown sugar
  3. 2 tspbaking powder
  4. 2eggs
  5. 1 cupunsweetened applesauce
  6. 1 tspvanilla
  7. 1 cupmilk
  8. 1Toppings: dried or fresh fruit, nuts, coconut, chocolate chips- your imagination is the only limit

Steps

  1. 1

    Grease muffin tin very generously and set aside

  2. 2

    In a large bowl mix oats, brown sugar and baking powder. Then set aside

  3. 3

    In a separate bowl thoroughly whisk eggs, applesauce, milk and vanilla.

  4. 4

    Add the wet ingredients to the dry and mix thoroughly

  5. 5

    Scoop the batter into prepared muffin tins

  6. 6

    Be creative and add toppings. Your imagination is the only limit! Pictured: raspberries, blackberries drizzled with honey, slivered almonds.

    Bake in a preheated °375 oven for 30 minutes

  8. 8

    Muffins come out of tin better if you let them set about 10 minutes. These freeze well. I make a batch and freeze for work.
