  1. 1 1/2 cupChocolate whey protein powder
  2. 1 1/2 cupCoconut Flour
  3. 2 tbspChia Seeds
  4. 2 tbspStevia or other sweetener
  5. 2 eachlarge eggs
  6. 2 tbspHoney
  7. 1 1/3 cup2% milk
  8. 1 1/2 cuppeanut butter
  9. 1 1/2 cupTrail mix or nuts dried fruit, coconut, your choice!

    Add all dry ingredients together and mix well

  2. 2

    Next add eggs, honey, milk, and peanut butter (or other nut butter if preferred). Mix well.

  3. 3

    Finally, stir in the trail mix or nuts, dried fruit, etc. I used trail mix with dates, chocolate pieces, peanuts and cashews.

  4. 4

    Spoon approximately 3 tablespoons onto a baking sheet and bake on 325°F for about 8 mins or until bottoms begin to brown.

  5. 5

    Approximately 13 grams of protein per cookie!
