Ingredients

2 servings
  • 3eggs
  • mushrooms
  • 1bag of spinach
  • 1bag of medium shrimp (peeled and thawed)
  • 1jerk sauce/marinade
  • 2 tbspbutter or margarine
  • 1 tsplemon juice
  • salt and pepper

Steps

  1. 1

    Scramble eggs and set aside

  2. 2

    Sauté mushrooms in bottom of tall pot

  3. 3

    Add spinach to pot and cook to taste

  4. 4

    Combine butter, lemon juice, salt and pepper and melt in microwave

  5. 5

    Pour butter lemon mixture over spinach. Add eggs. Stir.

  6. 6

    In a separate pan, cook shrimp in jerk sauce (or marinade/sauce of choice)
