Frittata

I wanted to use leftover vegetables and make something healthy and yummy. This is how I made it but you can use whatever veggies you want.

I wanted to use leftover vegetables and make something healthy and yummy. This is how I made it but you can use whatever veggies you want.
Steps
- 1
Preheat broiler to low heat.
- 2
Heat oil in an oven-proof pan. Cook vegetables on stove over medium heat.
- 3
Whisk eggs, cream/milk, salt, pepper, garlic powder, and parsley flakes. Add mixture to pan.
- 4
Make sure vegetables are evenly distributed in eggs but after that don't touch it and let it cook over medium heat until eggs start to settle.
- 5
When eggs are starting to visibly be cooked on top (forming a solid top coat) but still a little runny, add cheese and let it cook another minute.
- 6
Add bread crumbs and put in broiler for 5 minutes or until top starts to brown.
- 7
Remove pan from oven and let sit for a couple minutes before taking frittata out of the pan.
