2 cupquick cooking oatmeal
1/2 tspbaking soda
2 1/2 cupbuttermilk
1 cupflour (plain or all-purpose)
1 tspsalt
1 tspbaking powder
2 tbspsugar
1/3 cupoil
2 mediumeggs (beaten)

Combine oatmeal, soda & buttermilk. Let stand (at least) 5 minutes.

Combine flour, baking powder, salt & sugar. Add to oatmeal.

Mix oil & eggs into the oatmeal mixture.

Stir only until blended. Batter will be thick.

Cook on griddle or skillet over medium heat and ENJOY!
