Ingredients

  1. 4 lbPork shoulder or butt
  2. 1onion
  3. 1 clovegarlic
  4. Pork Rub
  5. 2 tbsppaprika
  6. 3 tbspbrown sugar
  7. 2 tbspchili powder
  8. 2 tspground cumin
  9. 1salt and pepper
  10. barbecue sauce
  11. 3/4 cupcider vinegar
  12. 1/2 cupwater
  13. 1/2 cupketchup

    Trim excess fat from the pork. Cut into smaller pieces to allow faster cooking.

  2. 2

    Combine all rub ingredients.

  3. 3

    Cover pork on all sides with the rub.

  4. 4

    In the pressure cooker with lid off, brown the seasoned pork in batches in a little oil. Set aside to rest when all pieces have been browned.

  5. 5

    Chop onion and garlic and cook for about five minutes in pressure cooker.

  6. 6

    Add all barbecue sauce ingredients to pressure cooker and deglaze.

  7. 7

    When all the brown goodness has been dissolved into the sauce, return pork to pressure cooker.

  8. 8

    Bring to full pressure and cook for one hour.

  9. 9

    Open using the natural release method. (Let pressure release slowly and naturally before opening 10-15 minutes).

  10. 10

    Shred the meat using two forks.

  11. 11

    Serve on your favourite bread and top with the leftover sauce from cooking.
