Spurred by the fact that on Monday I'll be getting a new delivery of fresh organic vegetables, I decided I needed to create a light but healthy dish using some of the wonderful organic vegetables that were currently in my frigerator.   • Organic
  • 1Hard boiled egg (optional)
  • 1Boneless skinless chicken breast, thinly sliced
  • 4 tbspCulinary Treasure,s Organic Lemon Ginger Sesame dressing / marinade (Costco)
  • 2radishes, thinly sliced
  • 3/4Carrot (average sized), shredded
  • 1Green onion, sliced
  • 1 cupSpinach (fresh), cut into 2" pieces
  • 1/2 cupBroccoli rabe, cut into 2" pieces
  • 4 cupKale, chopped
  • 1/3 packagesWhole wheat spaghetti pasta (16 oz. pkg.)

Steps

    Cook pasta as directed on package.

  2. 2

    Using a nonstick skillet over medium heat add lemon ginger sesame dressing / marinade and sliced boneless skinless chicken breasts. Cook until chicken breast is opaque.

  3. 3

    Once chicken breast is done, add the vegetables (stirring constantly) and cook until vegetables are wilted.

  4. 4

    Drain cooked pasta and rinse off in cold water.

  5. 5

    Combine pasta and vegetable mixture. Plate and garnish. Serve at room temperature.
