Vietnamese Chicken Pho

Ingredients

2 servings
  1. 1 packagesPho
  2. 2Chicken breasts
  3. 1 bunchBean sprouts
  4. 1 inchof ginger
  5. 1Red onion (sliced)
  6. 1Red chilli (sliced)
  7. 2 bunchesSpring onions (chopped)
  8. Chicken stock
  9. 1 tbspSoya sauce

Cooking Instructions

    In a large pot, add water and put ginger and chicken stock in. Bring to boil and lower the heat to simmer.

    In another pan, fry chicken breast until golden on each side.

  3. 3

    Slice and shred the chicken up once done.

  4. 4

    Prepare pho (see package for the instructions). Add into the pot and cook accordingly.

    Add union, spring unions, red chilli into the pot before serving. Don't cook them too long.

  6. 6

    When pho is well cooked, add shredded chicken and bean sprouts on top of the pho.

  7. 7

    Add coriander for garnishment.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
