Quick and Easy Pancit Canton

Pancit canton is a Filipino dish influenced from the Chinese. Mostly cooked for special occasions, the Pancit canton, as a noodle and with its yellow color, is a good luck dish that represent long life and prosperity. Special Pancit Canton recipes have more ingredients in it such as seafoods like prawn and squid aside from the typical chicken and pork.
Since we want it to be a quick recipe for a busy mom like myself, this is a more easy-less hassle way to make it. Thus, an option to make the chicken broth instantly is to use chicken broth flavoring cubes. Just omit step 1 of this recipe and directly stir fry your chicken with the other vegetables. When you are starting to make the soup, add your flavoring cubes (knor chicken cubes) into the mix and let it desolve properly.
Best about this dish is that my toddler loves it. Enjoy cooking!

In a boiling pan, boil the chicken with water and a pinch of salt.

When chicken is tender, separate the chicken and do not throw the stock.

In a wok with hot cooking oil, quickly stir fry the onions and garlic in medium heat. Add the saussage, chicken, cabbage, carrots and chicke n and stir fry.

Add the chicken broth (add another cup of water if you prefer to have a soup). Cover and let it start to boil.

When broth starts to boil, add the soy sauce and pancit canton noodles.

Let the noodle cook and serve immediately. Noodle tends to absorb the broth very quickly so it tends to get saggy when left in the soup for a long time.
