Ingredients

  • 1 tspVegetable oil
  • 1 lbElbow macaroni
  • 8 tbspButter
  • 1/2 cupColby cheese, shredded or cubed
  • 1/2 cupMonterey Jack cheese, shredded
  • 1/2 cupMild cheddar cheese shredded
  • 1/2 cupSharp cheddar cheese shredded
  • 4 ozExtra sharp cheddar cheese, cut into small chunks
  • 2 cupHalf-and-half
  • 1 cupVelveeta processed cheese, cut into small cubes
  • 2 largeEggs, lightly beaten
  • 3/4 tspSeasoned salt
  • 1/4 tspGround black pepper

Steps

  1. 1

    Preheat oven to 350. Lightly butter (or spray) 2 1/2 quart casserole dish.

  2. 2

    Bring large pot of salted water to boil over high heat. Add the oil and the macaroni, and cook until macaroni is just tender, about 7 minutes. DO NOT OVERCOOK!!! Drain well, return to pot.

  3. 3

    In a small saucepan or microwave, melt 8 tbs. butter. Stir into macaroni.

  4. 4

    In a large bowl, mix all the cheeses.

    To the macaroni, add the half-and-half, the eggs, seasoned salt, and pepper.

  6. 6

    Pour into casserole dish. Dot with butter and sprinkle with remaining cheese.

    Add the cheese to the macaroni, saving enough to sprinkle on top.

    Bake for 40-45 minutes, until bubbly around the edges.

Hi Janet. I like this recipe! I made it a few weeks ago. May make it again after Christmas as a side for family meal. Very good. I will post a photo when i make it again :)
