Ingredients

4 servings
  1. 450 grams (1 lbs)small onions or shallots, peeled
  2. 120 ml(half a cup) sun-dried tomatoes drained and chopped
  3. 2 clovegarlic, chopped.finely
  4. 10 mlchopped fresh rosemary(2 teaspoon),or 1 teaspoon dried
  5. 15 mlchopped fresh parsley (1 tablespoon) or half tablespoon dried
  6. 90 ml(6 tablespoon),olive oil,
  7. 15 ml (1 tablespoon)raspberry or balsamic vinegar
  8. 1 pincheach salt and pepper
  9. 1small handful of torn basil

Cooking Instructions

    Preheat oven to 150 C/300 F/gas2, grease a shallow,baking dish.

    Drop onions into pan of boiling water,cook for5 minutes, drain, then put into greased dish.

    Mix all the seasoning and herbs except the basil sprinkle over the onions

    Scatter the tomatoes over the onions

  5. 5

    Drizzle with vinegar and oil

  6. 6

    Cover with foil and.bake for 45 minutes

  7. 7

    Remove foil cook until golden brown, about 15 minutes.

  8. 8

    Sprinkle the torn basil over top.

  9. 9

    Serve from dish,
