Steps

Prepare fire using Charcoal and jiko
- 2
Prepare chicken by removing all the unwanted parts
- 3
Sprinkle salt all over it
- 4
Using a wire mesh place it on a jiko then put the chicken on the jiko but ensure its not direct on the fire to avoid it burning up
- 5
Also ensure that the heat is not too much it could burn or the chicken will get the direct smoke and that wont give out a good smoked chicken

Remember this procedure does not restrict you from smoking your chicken for several days before you eat it

You can tell that your chicken is ready if all the water it dries out all and the color of the chicken is almost golden brown

I use salt to help me get read of all the water in the chicken
