Ingredients

  1. 1small pumpkin
  2. 1onion, sliced
  3. 4whole garlic cloves
  4. 2sprigs fresh rosemary
  5. 1sprig fresh thyme
  6. 5cups chicken stock (enough to fill pumpkin)
  7. 2tablespoons olive oil
  8. 1teaspoon salt

    Gut pumpkin

  2. 2

    Heat olive oil on medium heat. Cook sliced onion, and whole garlic with salt until onions are translucent.

  3. 3

    Put onion, garlic, fresh herbs, and chicken stock into pumpkin and put pumpkin lid back on.

  4. 4

    Cook pumpkin at 400 for 2 hours or until pumpkin meat is tender

  5. 5

    To eat scrape pumpkin meat out and top with broth, onion, and garlic. Makes a delicious soup!!
