Ingredients

3 servings
  • 1Lean beef mince
  • 1chopped onion
  • 5peeled carrots
  • 1jalapenos (your desired amount delpending on how hot you like it)
  • 2garlic cloves
  • 2 tspcurry powder
  • 1coconut oil
  • 1 canChopped tomatoes
  • 1 cantomato pureé (small)
  • 3baby lettuce leaves (or cabbage leaves if you prefer)

Steps

  1. 1

    In a blender add onion, jalapenos, garlic and carrots to finely chop

  2. 2

    Lightly brown beef mince in frying pan using the coconut oil

  3. 3

    Add blended ingredients to the pan with mince and fry for few minutes

  4. 4

    Then add tomatoes and tomato pureé to pan and let simmer for few minutes

  5. 5

    Add whatever seasoning and herbs you desire and when done remove from heat

  6. 6

    Add a serving spoon full of mince to each whole lettuce leag and enjoy!!
