  • 2 1/2 cupsugar
  • 3eggs
  • 3 cupall-purpose flour
  • 3 tspvanilla
  • 1 cupoil
  • 2 cupzucchini, grated
  • 1/4 tspsalt
  • 1 tspbaking soda
  • 1/4 tspbaking powder
  • 1 cupchopped nuts, (optional)
  • 3 tspcinnamon

    Preheat oven to 350°

    Combine all ingredients

    Pour into two greased 9x5 loaf pans

    Bake for one hour
