Brown sausage and remove from pan reserving oil.

Fry hash browns in reserved oil. After flipping hash browns the first time, add onions and peppers and salt and pepper. Cook until tender. You may have to add little drizzles of oil every time you flip them to prevent sticking.

Add garlic, sausage and green onions. Cook for 1 minute.

Meenwhile, fry eggs in butter, over easy or sunny side up.

Plate hash with egg on top. Slice into yolk and let the "gravy" drizzle down! Top with chives.
