Very nice and light, especially in a hot day!

You can also put tomato slices ( put tomato slices in a frying pan until wither or in the oven and add with the other vegetables).

Ingredients

  1. Penne
  2. 500 gramspenne
  3. 1eggplant
  4. 3red peppers
  5. 3zucchini
  6. 200 gramsmushrooms
  7. 6 tbspolive oil
  8. 100 gramsGreek feta cheese cubes, optional
  9. 1salt
  10. 1ground black pepper
  11. Sauce
  12. 3garlic cloves, sliced in pieces
  13. 5 tbspbalsamic vinegar
  14. 4 tbspbasil

Steps

  1. 1

    Mix all sauce ingredients in a bowl.

  2. 2

    Cut the vegetables in pieces and put them in a pan with olive oil, salt and pepper.

  3. 3

    Cover with silvery foil and cook for 1hour.

  4. 4

    Prepare the penne according to manufacturers instructions.

  5. 5

    Mix penne with vegetables. Serve and drizzle with the sauce.
