Ingredients

  1. 900 gramsheavy cream
  2. 200 mlmilk
  3. 90 gramsglucose
  4. 1100 gramschocolate 58%

Cooking Instructions

    Put the chocolate on a large bowl ( if the chocolate comes on a bar, chop it into small pieces)

  2. 2

    Bring the milk cream and glucose to simmer

  3. 3

    Pour the hot liquids into the chocolate and cover, let it rest for 2 minutes then mix it until the chocolate is completely melted
