  1. Cauliflower
  2. 1 headcauliflower, washed, trimmed and cut into florets
  3. 1 tspItalian seasoning
  4. 3 tbspolive oil
  5. 1 dashsalt & pepper
  6. Vinaigrette
  7. 3 tbspkalamata olives, roughly chopped
  8. 4 eachartichoke hearts, roughly chopped
  9. 1 tspItalian seasoning
  10. 1/3 cupolive oil
  11. 1juice of 1 lemon, freshly squeezed
  12. 1/4 tspgranulated garlic powder
  13. 1/4 tsponion powder
  14. 1/4 tspblack pepper
  15. Topping
  16. 2 tspfresh parsley, chopped
  17. 2 tspgrated romano cheese

Steps

  1. 1

    Preheat oven to 450º.

  2. 2

    Mix cauliflower, olive oil, Italian seasoning, salt & pepper in a large bowl and toss to coat well.

    Spread cauliflower on a baking sheet in an even layer. Bake for 25 minutes, turning cauliflower halfway through for even browning until cauliflower is fork tender and golden brown.

    Mix all ingredients for vinaigrette.

    Drizzle warm cauliflower with vinaigrette and top with fresh chopped parsley and grated romano cheese. Serve and enjoy!
