8 ozPotatoes partially cooked
8 eachEggs whole
1Salt and Pepper

Preheat oven to 350

Cook bacon add onion saute for several minutes lightly caramelized

Add potatoes till light brown add roasted red peppers mix well

Break and seasoned egg in bowl add to saute pan

Cover place pan in oven cook to coagulated
