Cooking Instructions

Prepare noodles as directed on package ensuring noodles are al dente. Drain and add to a large bowl.

Add the oils and crushed red pepper to a small saucepan and heat over medium heat until fragrant.

Strain the crushed red pepper from the oil and add the dressing ingredients. Mix well and stir into the noodles. Let noodles cool for 5 to 10 minutes.

Add basil and cilantro to the noodles and mix well.

Refrigerate overnight or until cold.
- 6
Serve and top with green onions and peanuts.

I watch the people in the food courts of Bangkok and Singapore make this so quickly and skillfully with amazement.I've cut down on the spice. If you like it spicy, add some Thai chili pepper powder or chili flakes at Step 3, or serve the noodles with some chili powder on the side. Mix it in as you eat!Rehydrate the sen lek (Thai rice noodles) following the package instructions. If you use boiling water the noodles will melt so be careful. It's safest to rehydrate them in cold water for 2 to 3 hours, even though it takes time.Work through Steps 2 to 4 in one go. Tonight's challenge was an Asian themed dish created in 15 minutes with - only 15 ingredients pre-chosen by me at their disposal. 😈 [muwahaha!]Guess what? They all nailed it! Especially this student! 😆Anyway, overall this dish presents as primarily spicy and slightly salty.
