Ingredients

3 servings
  1. 1 1/2 lbBoneless Skinless Chicken Breast
  2. 1 cupSalsa (your favorite kind)
  3. 1/4 cupCreamy Peanut Butter
  4. 3/4 tbspAgave Nectar or Honey
  5. 2 tbspLemon Juice
  6. 1 smallSliver Crystalized Ginger
  7. 1 tbspSoy Sauce
  8. 1 smallDrop Sesame Oil
  9. 1/2 tbspGround Coriander
  10. 1 tspGround Red Pepper
  11. 1 tspKosher Salt
  12. 1/2 tbspExtra Virgin Olive Oil

Steps

  1. 1

    Add all ingredients, except chicken and EVOO, to a blender and blend until smooth.

  2. 2

    Place chicken breasts in bottom of slow cooker and pour sauce over the tops. Drizzle with additional 1/2 tbsp of EVOO.

  3. 3

    Cook on low for 8 hours. Serve over rice.
