Bring the milk to boiling point and add the vinegar and the salt.

Set the cloth on a strainer and put the strainer in the sink. Once milk separates into watery part and solid part, pour over the strainer. Before all the water runs out put the cheese in a recipient wih some of the water (abiut a finger of it). Let it cool and then put into the fridge.

Serve cold with seasoned with olive oil, pepper (black or white) and st just in case you think it needs more. Can also be served as the topinf od a few tomato slices.
