Asparagus bake
This is a my attempt to recreate a meal-sized version of a tapas dish I ate at a restaurant in Bristol. The crunchy nut texture really works with young fresh asparagus and a delicate cheese sauce. I used Wensleydale- that's all I had in the fridge, but feel free to substitute.
I served it as a vegetarian main with a sweet potato and avocado side salad

Preheat oven to 185 degrees C.

Toss asparagus and spring onion in olive oil and season with black pepper and a little salt (optional). Place on heatproof tray or in a shallow ovenproof dish.

Make simple cheese sauce by combining milk,butter and flour and stir continuously over a low heat until it thickens. Do not boil. Add grated cheese to taste and set aside to cool slightly.

Place asparagus/onion mix in the oven for 5 minutes.

Roughly chop nuts

Remove asparagus dish from the oven, pour over cheese sauce and sprinkle with chopped nuts. Return to the oven and bake for approximately 10 minutes.

Serve immediately with a salad dish and optional crusty bread.
