Gaspacho Alentejano (Poor Man's Gazpacho)

This is a classic dish I remember my grandmother making when I was a child still living with my grandparents in Portugal. Not a good dish to have for dinner as it's not very filling but it's perfect for a really hot summer's day and you want something to cool you down.

This is one of those recipes where you use your own judgement. If you prefer less vinegar then add less vinegar, I on the other hand prefer it really vinegary with more liquid than bread.

In a bowl add the vegetables and water.

Then season with salt. Add in the olive oil, and vinegar. Stir well.

Check seasoning is to your taste.

Add in the torn bread and using a wooden spoon gently dunk the bread in the liquid.

Serve immediately.
