Make peas boil in 1 litre of water for one hour. (you can also buy the canned ones and in that case you just have to heat them and keep some of the water for later).

Meanwhile toast the sesame grains in low flame for no more than 5_6 minutes. Don't over toast or it'll get a burnt (peanut) flavor

Let the sasame grains cool a little and the stir adding sesame oil (you can also use any other oil without strong flavor eg: sunflower) little by little until you get a cream (tahini). Be careful not to get a soup like!!

When the peas are soft enough turn the flame off and strain them keeping the cooking water for later.

Put the peas, the lime juice, half of the salt, the cumin, two spoons of the olive oil and a little of the cooking water. Stir until getting the desired consistency. Add more water if too thick. Taste and add the rest of the salt if necessary.

Put in a recipient and garnish with some paprika and the rest of the olive oil. Enjoy!!
