Steps

Preheat a large heavy skillet over medium heat, saute sausages till brown than drain

Heat a dutch oven or heavy stockpot with oil over medium heat

Add onions and garlic, cook 3-5 mins.

Raise heat to med- high and crumble in ground chuck. cook till browned.

add sausage, red peppers and jalapenos, cook 10 mins

stir in canned tomatoes, parsley, tomato paste, all herbs and spices, cook 10 mins

add fresh tomatoes, cook 10 mins.

serve with jack cheese, sour cream & scallions
