Soak the chana overnight

In a pressure cooker add soaked chana salt and soda and cook for six whistles.

In a pan heat oil

Add hing and bay leaf

Grind the onions ginger garlic and tomatoes

Add these to the oil

First add onions followed by ginger garlic and tomatoes in the end

Add red chilli powder and Chole masala and mix properly

Mean while separate the chana from water

Add the chana to the cooking masala

Add the water

Adjust seasoning and water level

I prefer cooking it again in cooker for 4 whistles.

You can cook in a kadhai if you wish according to your taste and required consistency

Serve with puris or rice.
