An easy source of Vitamins and Minerals at your disposal. Spinach is definitely a wonderful Green Leafy Veggie that works great for everyone. Combined with a few spices and Gram flour, this can be turned into an awesome snack that goes perfectly well the evening Tea. It's a great one for Shaam Ki Chai.
Everyone loves it including the children. They won't make a fuss. Though it's difficult to feed them Spinach in Curries or Gravies, they wouldn't say no to the Fritters.

Spinach has such wonderful nutrients that it's a must have one on a regular basis. Loaded with a horde of Vitamins and Minerals, it is a very cheap source of Iron that helps in making up Haemoglobin in our blood. Apart from Liver which is a Non-Veg source, this is a perfect Vegetarian source of Iron. Thus it cuts risk of Iron deficiency Anaemia. It can be said to be a super star among Leafy Vegetables. It helps in Osteoporosis too. Helps strengthen the Immune system and healthy Eyes.

Ingredients

  1. 2 cupsGram flour or Besan
  2. 1 tspRed Chilli powder
  3. 1 tspGinger Garlic Green Chilli paste
  4. 1/2 tspTurmeric powder
  5. 1/8 tspAsafoetida or Hing
  6. 3/4 cupButtermilk or water
  7. 1/8 tspBaking soda
  8. as neededWater
  9. as neededOil for frying

    Make a semi thick batter using all the ingredients. It's a must. It should not be watery at all. The batter should be thick yet smooth and lumpfree. Use your hands to make the batter. It's always beneficial that way. Clean hands thoroughly before proceeding with it. And always give the batter a standing time of atleast 20 minutes.

    Use of water depends upon the quality of the flour. So add it accordingly little by little. Therefore it's a bit difficult to say how much of water is enough for the batter. So use it according to the requirement.

    Clean and pay dry all the leaves. Set them aside until use. Meanwhile as the stipulated time gets over, heat enough oil for deep frying these fritters on a low. Don't hurry about it. This way the oil gets heated up really well.

  4. 4

    Dip each spinach leaf in the prepared batter until well coated on all the sides and deep fry in hot oil on a medium to high heat. Do keep a check on the temperature and fry. If it decreases, allow it to heat up and then proceed with frying. Do not do it on a high heat only. Maintaining the temperature is quite important. Drain on an absorbent paper or a kitchen towel after done. Similarly follow the same for all the fritters as they get fried.

    Serve these piping hot with any dip of your choice. Kissan Tomato Ketchup is the best. Enjoy! Yum!
