Ingredients

4 servings
  1. 2 cupsChickpeas soaked overnight
  2. 1/2 tspSalt
  3. 1 tspBlack pepper
  4. 1 tbspLow fat curd or olive oil
  5. 1/2 cupCoriander and mint leaves chopped
  6. 2Tomatoes chopped
  7. 1 tspLemon juice (optional)
  8. as required Spring onions a small bunch

Steps

  1. 1

    Boil the chickpeas with salt and drain.

  2. 2

    Make the dressing by blending the coriander and curd or olive oil.

  3. 3

    Add the black pepper.

  4. 4

    Toss all the ingredients until well combined.

  5. 5

    The salad is ready !
