Ingredients

2 servings
  • 4Chicken thigh (cut in stripes)
  • 1 canCoconut milk
  • 2 bunchBak choy
  • 1 bunchSpinach
  • 3Red chillies (shredded, but leave 2 uncut)
  • 1 boxShitake Mushroom
  • 1 tbspFish sauce
  • 3 smallLime leaves (shredded)
  • 1Chicken stock

Steps

  1. 1

    Heat the chicken stock in a big pot with chilli, coconut milk, mushrooms, lime leaves.

    Once it's boil, add chicken in and simmer for 15 mins

    Once chicken is cooked, add fish sauce, bak choy and spinach in and cook for another 2 mins.

    Done and serve with rice.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
