Ingredients

30 minutes
6 servings
  1. 3/4 cupBengal Gram or Chana Daal
  2. 3/4 cupYellow Lentils or Moong Daal
  3. 3/4 cupGreen Gram or saabut Hari Moong
  4. 1 1/2 tspSalt
  5. 1 1/2 tspRed Chilli powder
  6. 1large finely chopped Onion
  7. 1 tspcrushed Coriander Seeds
  8. 2finely chopped Green Chillies
  9. 3 tbspYoghurt
  10. 1 tbspgrated Ginger
  11. 8-10chopped Curry Leaves
  12. 1 bunchfinely chopped Coriander Leaves
  13. 2-3 cupsOil (for frying)

Steps

30 minutes
  1. 1

    Soak all the three lentils at least for 3 hours or preferably overnight.

  2. 2

    Add in all the ingredients except the green chillies, grated ginger, onion, coriander and curry leaves and grind.

  3. 3

    Make sure to grind them semi coarsely with as little water as possible.

  4. 4

    If the need for water is not felt, then do not use water.

  5. 5

    The batter should be thick and not flowy.

  6. 6

    Mix in the remaining ingredients left in the semi coarse lentil mixture.

  7. 7

    Heat the oil for frying on a medium flame.

  8. 8

    Shape the lentil mixture into medu vadas after greasing your palm a little.

  9. 9

    Deep fry on a medium to high flame.

  10. 10

    And also remember to fry in batches.

  11. 11

    The medu vadas are ready to be savoured in no time. Enjoy!
