Fresh steamed Maine Lobster, quickly tossed in lemon butter and served in a crisp puff pastry shell. This makes a delicious elegant appetizer that is so quick and dimple to make.

Ingredients

  1. 6Pepperidge Puff Pastry Dhells
  2. 1-2to 21/2 pound fresh steamed Maine lobster, meat remived
  3. 4 tablespoonssalted butter
  4. 2lemons cut into four wedges for eac lemon
  5. to tasteSalt and pepper
  6. 1 tablespoonfresh chopped parsley
  7. 1large egg beaten with 1 tablespoon water (egg wash)
  8. Cajun seasoning and Romano cheese as needed for sprinkling puff

Cooking Instructions

    Chop lobster neat

  2. 2

    Place pastry shells on parchment lined baking sheet, brush with egg wash and season with a sprinkle of Cajun seasoning and Romano cheeseBake according to package directions

    Remove tops and hollow out shell

  4. 4

    Meanwhile heat butter in a small skillet, add the juice of the 1/4 of thelemon and salt and pepper

  5. 5

    Add lobster meat and parsley and turn off heat and baste lobster with butter

  6. 6

    Fill hot pastry puffs with lobster using a slotted spoon to drain excess butter

  7. 7

    Serve hot with lemon wedges

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
