Found this recipe when looking up cooking methods for cauliflower like pizza crust and rice. It has the tangy buffalo flavor with an unexpected "meaty" bite. Paired with a cool blue cheese dipping sauce or make a lighter version using Greek yogurt.

Thoroughly rinse cauliflower and cut into florets that will resemble wingettes. I like to leave a long stem to act as a handle.

In a bowl mix flour with dry seasonings and then mix in water.

Dip each florets in the batter to cover, shake off the excess batter and place the "wings" on a cookie sheet lined with parchment.

Bake the "wings" in a 425°F oven for 25 minutes. Batter will crisp a bit.

Mix hot sauce with melted butter. Brush or spoon the mixture over each "wing" and continue to bake them for 8 - 10 minutes.

Serve with your favorite blue cheese dressing and celery sticks!
