Chilaquiles

My hubby loves cooking, and I always love his cooking myself, so here's a simple recipe I figured I'd put on here and see how everyone likes it :)

My hubby loves cooking, and I always love his cooking myself, so here's a simple recipe I figured I'd put on here and see how everyone likes it :)
Steps
- 1
Take the 2 chicken breasts in a skillet with very little (half a cup) of water, let it boil @ 350°F for about 15 minutes. Add diced onions as it boils
- 2
Remove and dice chicken after it is cooked.
- 3
In the skillet, combine the chicken, strips of bell pepper, let it simmer a few minutes then add the corn. (Also if you haven't added already to your preference go ahead and add: the salt, the pepper and the garlic)
- 4
Now you can add in the tomatoes and the chili powder.
- 5
After its had a while to simmer and soak up the tomatoes, you can now add the corn tortilla strips. After letting sit for a few minutes tortilla will begin to tear apart.
- 6
turn off heat, add cheese of your choice, i.e. cheddar, monterrey jack or cream cheese as a topping.
