When I was working in kitchens, this was a commonly employed cure-all. Nothing special really, but it's helped plenty of cooks through many a long service.

Bring water to a boil.

Meanwhile, peel the ginger. 25 grams of ginger is a rough estimate. Adjust to your liking.

A great trick for peeling ginger is to use a small metal spoon. Checkout the video to see what I mean.

Slice the ginger thinly and dump it in the boiling water.

Pour the honey into a mug. Place a strainer over the mug and juice the lemon through the strainer.

Taste the simmering ginger water. If it's not strong enough for you, add some more ginger and simmer a bit longer.

When you're happy with the ginger flavor, pour the water through the strainer and into the mug.

Stir and taste. Add a little honey or lemon if you like, or add some water to mellow it out.

Wrap up in a blanket and get some rest. Alternatively, get your station together so we can get this over with and go get a real drink.
