Ingredients

  • 16 ozlump crabmeat, picked over and any shell removed
  • 1 cupfinely crushed Ritz crackers
  • 2eggs,beaten
  • 6 tbspmayonnaise
  • 1 tspdried tarragon
  • 4 tsplemon juice,fresh
  • 1 tbspOld Bay seasoning (less if youd like but I prefer the whole Tbsp)

Steps

  1. 1

    Preheat oven to 350. Combine all ingredients well but gently. You don't want to break up the crabmeat too much.

  2. 2

    In a mini muffin tin place crab cake mixture to 3/4 full. Bake for 10 minutes or until a light golden brown. Serve with cocktail and tartar sauce. Makes approximately 36 mini crab cakes.
