Peel the potatoes. Slice them into 1/8- to 1/6-inch (3-4 mm) thick rounds. Rinse the potato slices and drain them well.

Cut the cheese into thin slices. Press the garlic cloves and finely chop the parsley.

Heat oil in a large sauté pan. Add the potatoes to the hot oil and cook over high heat for 10 to 15 minutes, stirring regularly. Then cook for another 30 minutes over medium heat.

Five minutes before the potatoes are done, add the chopped parsley, pressed garlic, salt, and pepper.

Once the potatoes are cooked, add the cheese to the pan. Let the cheese melt to your liking—just melted or slightly browned. When the cheese is fully melted, the dish is ready to serve.
