Ingredients

  1. 2 cupTri-color quinoa
  2. 2 mediumJalapeños
  3. 1 largeOnion
  4. 1/2 cloveGarlic
  5. 2 cupChicken stock (low sodium)
  6. 1 canDiced tomatoes (30 oz)
  7. 1 canCorn (15 oz)
  8. 2 canBlack beans (15 oz)
  9. 1 largeBell pepper (optional)
  10. 1 ozCilantro (chopped)

Steps

  1. 1

    Heat a pan on medium-high heat. Drizzle olive oil and sauté diced onion and garlic.

  2. 2

    Thinly slice jalapeños and add to pan, with seeds if heat is desired. Add diced bell pepper (optional).

  3. 3

    Add quinoa and brown with vegetables for 3-5 minutes.

  4. 4

    Slowly add in chicken broth. Then add all other ingredients and cover.

  5. 5

    Decrease heat to low to allow ingredients to simmer about 15 minutes. Check to ensure quinoa is cooked.

  6. 6

    Make sure to season while cooking. Add chopped cilantro a few minutes prior to completion if desired.
