Ingredients

2 servings
  1. 450ripe baby tomatoes
  2. 450 gramsgranulated sugar
  3. 1lemons, juice and rind
  4. 1ground cinnamon or ginger

Steps

  1. 1

    Blanch tomatoes in boiling water to skin them

  2. 2

    Put ina bowl cover with the sugar and stand overnight

    Drain juice into a pan and boil to a heavy syrup

  4. 4

    Add tomatoes rind and juice of the lemon and the spice of your choice. And cook until quite thick

  5. 5

    Pot it on screw top jars
