Spicy Fried Noodles - Cantonese style

Cooking Instructions

Prepare the sauce. Add soy sauce, sesame oil, honey, fish sauce, and white pepper together. Set aside.

Soften noodles. Heat 1 tbsp olive oil in wok and spread the softened noodles thinly. Important: use a fork or chopsticks to keep the noodles from clumping into a big ball. After two minutes, set aside.

Heat second tbsp olive oil to fry garlic, onion, spring onion and chilli. After a minute add the carrot, celery, and bamboo. Add a a few tablespoons of water and steam with a lid/cover for 3 min. Make sure it doesn't burn.

On high heat, add the fried noodles and the pre-mixed sauce. Fry until everything is coated, liquid is gone, and noodles are the desired texture.

If you want to add sprouts. Add them at the end so they are heated up but still crunchy.

This is one of those recipes that allows a lot of customization if you desire. Want vegetarian, leave the meat out. Or substitute tofu our faux ground meat. It's all good. Don't have the veggies I used, use something else. Want more heat, add some, hot sauce or crushed red pepper, jalapenos, it's all good. Try it, next time have some fun with it after you see how easy it is. Since it's difficult to make the sauce from scratch, I use store-bought sauce for convenience.For the sauce, you could use soy sauce or sesame sauce. I used soy sauce this time.If you're using ichimi chili as a substitute for the Korean chili pepper, using a half-amount should be okay. This is not expensive, easy with lots of flavor. Common ingredients that can be obtained in regular groceries makes it ideal for coming home from work and whipping up dinner.
