Ingredients

  1. potato salad
  2. 6yukon gold potatoes, washed and skins left on.
  3. 3scallions, sliced
  4. 3hard boiled eggs, peeled
  5. 1/2 cupprepared mayonnaise
  6. 1 tspsalt
  7. 2 1/2 tbspmalt vinegar
  8. 1/2 tspfresh grated peppercorn blend
  9. 1/2 tspbrown mustard
  10. 1/8 tspcelery seed
  11. 1 tbspchopped flat leaf parsley

Steps

20 mins
  1. 1

    Boil potatoes until just tender. This can take up to 15-20 minutes depending on size.

  2. 2

    Drain and cool.

  3. 3

    In a large serving platter add all other ingredients except eggs. Mix well.

  4. 4

    Add potatoes that have been cut into large chunks and toss gently.

  5. 5

    Slice eggs and toss gently again.

  6. 6

    I serve this potato salad warm but you may chill several hours before serving.
